Pues que me encanta hacer cake pops i cake balls!!

Sí,sí.

Lo he decidido!!

Ah!! Acompañadas por supuesto de una super canción!!! Os dejo...More than words - Extreme, espero que la disfrutéis!!! :)

CAKE POPS O CAKE BALLS SENCILLOS

Ingredientes (Receta de Maite's Sweet Food) (Para unos 30 cake pops o cake balls)

Medio bizcocho

Hello!!!!
As you can see today's post is related to a very, very special and delicious kind of dessert.

Cake pops and cake balls!!!

They are delicious, super cute, very easy and quick to do!!!
I have always wanted to do some but I didn't find time to do, but this weekend I decided to make it!!And it was amazing!!!

Before going to the recipe I just want to put the song of the post More than words - Extreme!! Simply awesome!!!

By the way, do you know that we have now facebook page???I hope you like it!!!Maite's Sweet Food :)

SIMPLE CAKE POPS OR CAKE BALLS

Ingredients (It makes about 30 cake pops or cake balls)

Half sponge cake
Milk chocolate buttercream (To see the recipe click here.)
Milk chocolate
White chocolate
Sprinkles
Cake pop sticks

First of all, we have to crumble the sponge cake in a bowl with our hands. When we have all the crumbs we add the buttercream. We have to add the necessary quantity to be able to make balls with the mixture.

After that, we make the balls. If we want them to be cake pops we take our cake pop sticks and sink one of the tips into melted chocolate and then stick it into the balls.

If we want to do cake balls we don't have to do anything, by now.jaja

We put then the balls with or without stick, both, in the freezer for about 15 minutes or in the fridge for 1 or 2 hours.

Once the time has passed, we take our balls and we just have to sink them completely into melted chocolate.

How can we cover with melted chocolate the cake pops and balls???
In the case of cake pops this is very easy to do thanks to the stick they have, but how about the cake balls??

Well, is quite easy, you can use a toothpick to put and take them from the melted chocolate and later take the toothpick and cover the little hole with some more chocolate.

To finish we put on top some sprinkles to make them look beautiful!!

We let them dry and after that they are ready to be eaten!!

I hope that you like the recipe and try it!!

Thanks for reading!!!

**If you want a recipe for the sponge cake you can use this one: Yogurt sponge cake

Mil gracias por leer!!

Vanilla and milk chocolate layer cake!!

Hola!!!

Hi everybody!!

Today I'm bringing you my FIRST LAYER CAKE!!

I was really excited to try to bake one of this super, delicious and beautiful cakes and finally, for my grandma's birthday I did it!!

I bake the classic one, the classic birthday cake, of vanilla and chocolate. And all my family loved it!!
Ah!! And of course the song!! Today...To love you more - Celine Dion. Because it's always a pleasure to hear Celine singing!!

CLASSIC BIRTHDAY CAKE
Igredients

2 Sponges (you can bake 2 or 1 and divide it into 2)
Milk chocolate buttercream

250 gr unsalted butter at room temperature
250 gr icing sugar
100 gr milk chocolate melted
1-2 teaspoons of milk

First of all, we have to bake the sponges. Some people use different sponges to make every layer and others bake only one sponge and divide it into layers. I just used one.

For the sponge recipe you can use the one that you prefer, as long as it's the classic one.
**I used that one: Yogurt sponge cake

Then we make the buttercream.

First, we take and what we melt chocolate in the microwave and keep it. Second, we take the butter and beat it with the icing sugar, remember it is important that the butter is at room temperature and remember to cover the bowl with a towel if you don't want to make a mess!!

Finally,we add the melted chocolate and one or two tablespoons of milk and the buttercream is ready to be used!!!

We divide our sponge (remember that it has to be cold), in case that we are just using one, and we put buttercream in the middle of the cake. We spread the buttercream using a spatula. Once the layer is covered we put the top layer and start to cover all the cake also using a spatula.
We start covering the sides of our cake and after that we will cover the top.

If after covering the cake you have extra buttercream, you can put it on a pastry bag and decorate the edges of the cake.
I hope you like the recipe!! And remember that if you have any comments, doubts or requests you just have to tell me!! :)

Thanks for reading!!

Vanilla cupcakes with chocolate cream cheese frosting!!

Decoramos y a comer!!

I hope you love cupcakes because here come, more cupcakes!!!!!!!

Last week, before I had started university I invited two friends to have lunch at home. We had a great time together talking about the summer and other stuff.

So, Berta and Dolors, two of my school friends, came home and then I made for them vanilla cupcakes with chocolate cream cheese frosting!!!

The cupcake recipe is the classic one and the frosting is a recipe from Donal Skehan.

In case that you don't know him; he is an irish chef. I love his recipes and he also helps in the The Great Irish Bake, that wants to get some money to help for an infantil hospital.

You can find his recipe in the web of The Great Irish Bake and also some more dessert recipes, he used this frosting recipe to serve the brownie but with the vanilla cupcakes it tastes also amazing!!

And at last but not least, the recipe of the post, Don't Speak - No doubt. I'm sure you know that amazing song!! :)

VANILLA CUPCAKES WITH CHOCOLATE CREAM CHEESE FROSTING

Ingredients (For exactly 12 cupcakes)

For the cupcake:

70 ml of oil
145 gr of sugar
2 eggs
145 gr of flour
2 tablespoons of milk
1 teaspoon of vanilla extract
1 and 1/2 teaspoon of baking powder

For the frosting:

50 gr of butter at room temperature
225 gr of cream cheese like Philadelphia
160 gr of icing sugar
25 gr of cocoa powder

First of all, we take our paper liners and we put them in our mold and preheat the oven to 180 ºC.
Then prepare the cupcakes. We first mix the oil with the sugar and beat them well. When it's well blended,we add the eggs one by one and continue beating.
Once done, we add half the flour and the baking powder, beat and then add the milk beating all the time. Then, we add the other half of the flour and finally the vanilla extract.

Then, we fill 3/4 parts of our paper liners and we put the mold in the oven at 180ºC during 20-22 minutes.

To check if the cupcakes are done we can we can sink a toothpick into a cupcake and if it comes out clean, it means that the cupcakes are made.

**RECOMMENDATIONS: To fill the cupcakes you can use a ice cream scoop.

For the oven: you should better put the mold on the grill and not on the baking sheet because it can scorch the mold. And I only turn on the under part of the oven to bake them. And if you want them to be toasted you can turn on (when the cupcakes are baked and only for a few minutes, constantly watching) the top part of the oven. And the cupcakes will look awesome!!

To make the frosting:
We take the butter and the cream cheese and we beat till everything is well integrated. After that, we add the icing sugar and the cocoa powder and we beat till we have the frosting texture.

**RECOMMENDATION: When you beat the butter with the icing sugar remember to cover the bowl with a towel otherwise you will dirty all the kitchen!! ;)

That's all for today!!! Thanks for reading!!!

They were gorgeous!! Everybody loved them!!!!!

I put here first the song of the post: The scientist - Coldplay. Beautiful voice. Beautiful melody. Beautiful lyrics. Beautiful song.

LEMON CUPCAKES

Ingredients (For exactly 12 cupcakes)

For the cupcake:

60 ml of oil
155 gr of sugar
155 gr of flour
2 eggs
1 and 1/2 teaspoons of baking powder
Half lemon juice
Lemon zest
1 tablespoon of milk

For the frosting:

200 gr of cream cheese, like Philadelpia
150 gr of icing sugar
120 gr of butter at room temperature
Lemon juice drops (2 or 3 teaspoons)

For the preparation you can click here!! Changing the ingredients that it says for these ones of course!!! :)

Now the new ones!!

MANGO CUPCAKES
Ingredients (For exactly 12 cupcakes)
For the cupcake:

70 ml of oil
150 of sugar
150 gr of flour
2 eggs
3-4 tablespons of mango purée
1 and 1/2 teaspoons of baking powder
1 tablespoon of milk

For the frosting:

200 gr of cream cheese like Philadelphia
150 gr of icing sugar
120 gr of butter at room temperature
2 tablespoons of mango purée

First of all, we have to peel one mango, chop it and take some pieces and squeeze them till we have a mango pureé.
After that, we put 12 paper liners in a mold and we preheat the oven to 180 ºC.
Sieve the flour and baking powder, put in a bowl and reserve it.

Then, we beat the oil with the sugar and when all it's well integrated we add the eggs one by one and mix everything well. Then add half of the flour and the baking powder and we continue beating. Then, we add the milk and the mango's purée and continue beating till we have an homogeneous dough.

When we have the dough, we fill 3/4 parts of the paper liners and we put the cupcakes in the oven for about 20-22 minutes to 180ºC.

To check if the cupcakes are done we can sink a toothpick into a cupcake and if it comes out clean, it means that the cupcakes are made.

And now, the frosting!!!

To start, we take the butter, remember it is important that it is at room temperature and beat it with the icng sugar.

**RECOMMENDATION: When you beat the butter with the icing sugar remember to cover the bowl with a towel otherwise you will dirty all the kitchen!! ;)

Once everything is well integrated we add the cream cheese and continue beating and then the two tablespoons of mango purée and we beat again till everything is well integrated and has the frosting consistency.
Finally, we put the frosting into a pastry bag and decorate them!!!

I hope you enjoy it!!!Thank you very much!!!

Mil gracias!!!

ENGLISH VERSION

Hello!!!

¿¿How are you?? ¿¿Ready for a new cupcake recipe?? I'm sure you are!!

Well, I made these cupcakes to a friend of mine that is going to live in London the whole year working as an au pair.

So to make something for the farewell I baked some white chocolate cupcakes. Some beautiful, elegant and delicious white chocolate cupcakes!!

To make the pictures I used the tray that my English-french family gave me before I came back to Spain. Beautiful isn't it??

Monique, do you like the pictures??? Thanks for the tray, it's amazing!!

And before to start the recipe, the song of the post, today, Because we can - Bon Jovi, because we have to start well the new course!!!

WHITE CHOCOLATE CUPCAKES

Ingredients (For exactly 12 cupcakes)

For the cupcake:

70 ml of oil
145 gr of sugar
2 eggs
145 gr of flour
1 tablespoon of milk
1 and 1/2 teaspoons of baking powder
75 gr white chocolate melted

For the buttercream:

175 gr of butter at room temperature
175 gr of icing sugar
60 gr of white chocolate
1 teaspoon of vanilla extract
1 tablespoon of milk

We preheat the oven at 180ºC and prepare our paper liners in the mold.
First of all, we sieve the flour and the baking powder and keep it apart.
Then, we beat the oil with the sugar till their are well integrated. After that, we incorporate the eggs one at a time and continue beating. Once is all we integrated, we add half of the flour, beat and then the milk and beat. And when we have finished we add the other half of the flour.

Finally, we add the white chocolate beat again and then we fill 3/4 parts of our paper liners. At last, we put the mold in the oven at 180ºC during 20-22 minutes. To check if the cupcakes are done we can we can sink a toothpick into a cupcake and if it comes out clean, it means that the cupcakes are made.

**RECOMMENDATIONS: To fill the cupcakes you can use a ice cream scoop.

To prepare the buttercream we melt the white chocolate in the microwave and reserve it.

We put in a bowl the butter and the icing sugar and beat it (remember that the butter has to beat room temperaure).
When all is well integrated we add the melted chocolate and beat a few minutes more. Then, we add the vanilla extract, beat and the milk and beat a bit more. Not too much because then the buttercream will be very liquid.
Once the buttercream is finished we put it in a pastry bag and use it to decorate our cupcakes.

**RECOMMENDATION: When you beat the butter with the icing sugar remember to cover the bowl with a towel otherwise you will dirty all the kitchen!! ;)

I hope you like the recipe!!!
Thanks for reading!!!!

Un beso
